A staple in every French kitchen, saucisson is a dry-cured sausage similar to salami.

Our certified free range pork saucissons are made in Queensland, following old, original French recipes and techniques. With the addition of herbes de Provence, these saucissons taste just like the South of France.

Slice it up and enjoy with some wine, with raclette cheese, in salads, on charcuterie boards, pizzas, quiches and more. Our favourite way to gorge on saucisson is to slice it up with a baguette slathered in butter, cornichons and brie. Your next apero hour awaits!

Cured Meats:
Store our delectable cured meats in the refrigerator. For optimal flavor, bring them to room temperature before serving. Consume within the recommended period for the best taste experience.

Crackers:

Condiments:

Par Excellence!

On a recent visit to the Byron Bay Hinterland, I stumbled upon Byron Bay Olive Co headquarters because we were detoured during some nearby roadworks! Don't be fooled - as well as a mouth-watering array of olives, I purchased three delicious saucisson and some leaf tea to enjoy during our stay. Such friendly staff and their helpful recommendations made another visit during our next stay in the region an absolute must! If I could give six stars, I would!
